Generally, sake is made by adding water after storage to adjust the alcohol content to around 15%. “Genshu” is made without adding water, allowing you to enjoy the rich aroma and flavour of original sake with an ABV of about 19% to 20%. Hatsuzakura Genshu has a thick and mellow taste, and the sweetness and umami of the rice spread to the palate. Drinking at room temperature or warmed is recommended, and it goes well with grilled dishes or roasted meat.

It is characterised by the sweetness of the rice and the right amount of sour flavour spread in the mouth, and it is recommended to drink with heat. It goes well with strong-flavoured dishes or meat dishes and also grilled seafood.

This sake has been aged for a long time, which is rare in Japan. Like sherry wine, it is fragrant and has refined tenderness and sweetness due to aging. Drinking at room temperature, heated, or cooled down after heating is recommended. Serving over the baked fruit or ice cream as dessert is another way to enjoy it.

Brewed in a special transparent acrylic tank. It can be observed by all delicate natural movements of yeast fermentation we care for very sensitively. This process makes a gentle and elegant taste like anything else. It tastes clean and gorgeous.

 

Mongai Fushutsu Junmai Ginjo Black 60

Mellow and rich taste. Suitable for drinking with a glass. Rich umami taste goes well perfectly with any meal. Higher Koji-rice ratio(25%) than the Japanese sake industry average(18%), which gives a rich taste of rice.

The first taste is fruity but the aftertaste is dry and crisp because to be fermented at lower temperatures.

I MY ME Kin no Junmai-shu

Most sake made with ancient rice is made with a mixture of rice dedicated to sake (sake rice), but this junmai sake “I MY ME” is made with 100% ancient rice.

It is highly fragrant and sweet on the palate. The acidity derived from ancient rice creates an addictive sweet and sour taste, with a unique flavour that lingers on.

Wine-like taste goes well with not only Japanese dishes but also Italian or Chinese cuisine.

Niwadani Tobuzuki

This 100% Yamada-Nishiki sake is produced in the ‘Yuniwa no Sato’ area of Kamikamiya in Sakai City, Osaka Prefecture, using no-tillage cultivation without pesticides or chemical fertilisers. The rice is milled to 90%, and no brewing alcohol is added to bring the full flavour of the rice.

The moderate acidity keeps it from being too heavy and clears the throat. The taste changes as the temperature changes, making it a strong, full-flavoured Junmai-shu.

Polishing the Yamada-Nishiki to bring out the full depth of its flavour. The natural sweetness of the rice, the full flavour and the hidden acidity give it a strong flavour profile. The aroma is sweet, typical of Yamadanishiki. The aftertaste is clean and clutter-free, making it a beautiful junmai ginjo.

 PolishingThis Junmai Daiginjo is made from 100% Yamadanishiki rice grown without pesticides or chemical fertilisers in the “Yuniwa no Sato” area of Kamikamiya in Sakai City, Osaka Prefecture. A strong, umami flavour has been produced because the rice is grown using natural farming methods. The umami is rich yet crisp and clean on the palate.
